peach + pecan baked oatmeal
it’s peach season! before putting up some peaches, i’m making some simple, naturally sweetened summer treats.
first up, it’s peach + pecan baked oatmeal for breakfast. not too much writing here, as the frenzy of summer has kicked in, you can find the recipe below!!!
peach + pecan baked oatmeal
Ingredients
2 cups oat milk
2 large eggs
1/2 cup maple syrup
1/4 cup butter, melted (or coconut oil) l
1 1/2 tsp baking powder 2 tsp vanilla extract
a pinch of cinnamon
1/4 tsp salt
4 cups rolled oats
1/4 cup chopped pecans or other nuts (optional)
two peaches, sliced.
directions
Preheat oven to 375 degrees. Grease baking dish + set aside. In a large mixing bowl, whisk together oat milk, eggs, maple syrup, melted butter or coconut oil, and vanilla.
In medium sized bowl, mix together oats, baking powder, salt, cinnamon + pecans. Pour dry ingredients into the wet, combine well. Pour mixture into prepared baking dish and spread evenly. If it looks dry, you can add a little more milk. Top with sliced peaches, pushing them slightly into the oatmeal mixture.
Bake in oven 35-40 minutes or until set, and lightly browning at the edges. Remove from oven, serve hot with a splash of oat milk. Griffin enjoys his with a drizzle of maple syrup too.
